Vegan or Vegetarian Lunch Challenge – Week 1

My daughter and I have decided to plan and make together vegetarian or vegan lunches (if we can pull that off) for every day of this week. This of course will take some planning. Thursday is veg day for the adults in this house, curtesy of my FIL’s religious belief. But we want to make every lunch a vegetarian meal. Three reasons stand behind this. More healthful eating. More conscious eating. Making our personal journey towards ethical eating and living.  We have been watching quite a few documentaries and its becoming more and more apparent to us, that a primarily (and eventually totally) plant based diet will be the right thing to do in every respect. I am on statins and I want to get OFF them by the middle of the year.

My huz will be ok with veg once a day, the challenge is primarily two-fold. Will my FIL be able/willing to eat a non-Indian veg. meal, and what do I do with my seven year old boy. Bear is a pretty good eater for a seven year old in terms of what he’ll eat, but he is an avowed carnivore. His vegetable repertoire increased from nothing to quite a lot but an all veg lunch? Ain’t happening.

Today’s Lunch Menu is panfriend chickpea patties with a cucumber mint sauce, and a  Toasted Israeli Couscous Salad.
