We are homeschoolers, but over the past few weeks, I began to ponder whether to try out public school for my son who is in second grade. He already goes to that school for gym, art, and music and I liked his classmates and teacher a lot. So we are trying out the whole day school thing for 3 days to see if he wants to go to school for the rest of the school year, until we re-evaluate again. It was so quiet in the house without him here, and we really missed him. But we did get a lot done, and I did have time to cook a lovely, vegetarian lunch.

Today’s menu consisted of creamy polenta with braised, garlic and peppered  greens (swiss chard and spinach) and a vegetable medley (summer squash, zucchini, eggplant, tomato, sweet peppers and onions, sautéed with a touch of olive oil, garlic, and mixed Italian herbs. All this was served with some fresh chèvre and hot baguette. Delicious!

Since we have a lot going on tomorrow, we will be eating Morningstar brand veggie burgers for lunch.
