My Kid eats Brussel’s Sprouts and LOVES them!

Well, one kidlet at any rate. The older one. My younger one will not. A few months ago I made Brussel’s Sprouts for myself and IT Man when my daughter (12) remarked that she wanted to try some. I didn’t expect her to like them but she plowed into them with all the grace of a starving racehorse. A kid that eats  Brussel’s Sprouts  voluntarily, I’ve never even heard of something like that.

This recipe is very healthy, very tasty, and super quick.

Because we are all crazy about them we eat a ton of them. I base the list of ingredients on what a sane, not-crazy-but-they’re-ok’ person would likely eat.

Average about 5 sprouts a person. Wash, trim and cut into half. Heat a non-stick pan on medium and spray some extra virgin olive oil. When the olive oil is very warm place  Brussel’s Sprouts cut side down in the pan. Sprinkle with a tablespoon (per serving) of chopped onion. Let roast on a low medium.  When the cut sides have developed, start to stir. Roast for another 3-5 minutes until the onions start to soften, stir in about 3-4 tablespoons of liquid (per serving). This is where you get to be creative.  You can make this vegan even. We like to add beef broth. Vegetable broth, a half-half mixture of apple cider and apple cider vinegar, some white wine… all are fair game. Raise the heat to medium and while stirring cook liquid off.  Season with salt and pepper to taste. Serve hot.
